Summer Berry Cordial
This cordial is a good way of using up a summer glut. Use any combination of berries and any amount of berries in a similar ratio to sugar as suggested here (adjust the sugar to taste if required).
The quantity below makes a medium jug, enough for about 8-10 glasses. If not using the cordial fresh, you may need to reheat it slightly if it sets a little: this will depend on the type of berries you use.

1. Over a low heat, cook the fruit with 1 tablespoon of water until they are softened and have released their juices. If desired, you could also add some mint to the fruit as it cooks.

- 300g redcurrants and blueberries, washed
- 85g caster sugar
Method

2. Over the lowest heat, add the sugar and cook gently until dissolved.
3. Sieve the mixture into a bowl using a metal sieve.
4. Pour into a jug. Serve a small amount of cordial in a long glass, topped with ice-cold sparkling water or even sparkling wine.
