Golden Apple Crunch
This is such a simple yet incredibly tasty dessert. I make it to use up a glut of Bramley's. My mum introduced me to this idea; it was popular when she first made it but I think - with the craze for cereal flavours in ice cream, for instance - it might prove even more popular now.
Note that the topping will go soggy if you prepare it too far in advance so it's best to make the topping fresh not long before you need to serve it. Serve with good quality vanilla ice cream.
The dish you use should be fairly deep.

1. Stew the Bramley apples by peeling, coring and slicing them and then cooking in about 2cm water over a low heat until reduced to a pulp. Check the taste: if you find it too sharp, sweeten it slightly using caster sugar but bear in mind there's quite a lot of sugar in the topping, which will help to sweeten the overall taste. Pour the apple into the base of the dish.

- 350g stewed Bramley apple (about 8-10 apples but depends on size)
- 50g butter
- 3 tablespoons golden syrup
- 1 tablespoon granulated sugar
- 100g cornflakes

2. Melt the butter and syrup over a low heat in a saucepan. Add the granulated sugar and stir until dissolved. Turn off the heat.
3. Stir in the cornflakes and make sure they are fully coated in the mixture. Top the apple with the cornflakes. Leave to set for about 15 minutes and then serve immediately, with ice cream.
