Scraps Trifle
This trifle tastes more elegant than the name suggests! It is such a quick, easy and delicious way of using up cake scraps. If you find yourself with cake leftovers, crumble it up, soak it with generous amounts of elderflower syrup/cordial and cover with spoonfuls of yoghurt. Layer them up and then sprinkle some grated lemon zest over the top. A light, refreshing and vibrant dessert that can be served as part of a quick lunch or even at a dinner party.
I've deliberately not included quantities. Let them be governed by the amount of cake leftovers you have, and how many layers you'd like to include.

1. Crumble the cake, soak it with elderflower syrup and then spoon over the yoghurt. Repeat the layers until you've used up all the ingredients.
2. Sprinkle cake crumbs and lemon zest over the top, to decorate.
