Plum and Flax Crumble
I picked up a bag of flax flour at a course that I attended on growing flax and its various uses. I was an immediate convert to the nutritional (and environmental) value of flax: it is a great source of Omega 3, for example. Flax produces a darker flour than most, with an earthier taste. I think that's what pairs it beautifully with the deep purple-red of the plum. It's a little bit different, and will intrigue your guests. You could even add flax seeds to the crumble topping, for extra crunch, if you wanted.
Serve with ice cream or cream.

1. Preheat the oven to 180°C fan. To make the crumble, mix all the dry crumble ingredients together and then rub in the butter until the mixture resembles fine breadcrumbs.

Ingredients
For the crumble topping
- 100g plain flour
- 100g flax flour
- 50g caster sugar
- 50g demerara sugar
- 1 tsp cinnamon
- 120g butter, cubed
- 650g plums, stoned and cut into halves
- 40g dark brown soft sugar
- 1 tsp mixed spice
- 1 small cooking apple, peeled and grated
- Juice from ½ lemon

- Long shallow baking dish (mine is 31cm in length).
1. Preheat the oven to 180°C fan. To make the crumble, mix all the dry crumble ingredients together and then rub in the butter until the mixture resembles fine breadcrumbs.
2. Place the plums in the base of a shallow baking dish, and sprinkle over the grated apple. Then, sprinkle over the sugar and mixed spice.
3. Sprinkle the crumble topping over the fruit and bake for 30 minutes. Serve with ice cream/cream.
