End-of-the-Cereal Bars
The cereal dust at the bottom of a cereal packet is the very best part, in my opinion. Reaching it always feels like a good morning omen. These no-bake bars are inspired by that delight: mixed with condensed milk and topped with a Greek yoghurt icing, the crushed flakes come together into the tastiest cereal bars. As a good source of calcium and fibre, they can be made as a portable breakfast treat.
These are so quick to make, ideal for baking with kids, who will love sprinkling on the red berry topping.

Ingredients
For the bars
- 300g Kellogg's Special K Red Berries cereal
- 397g tin condensed milk
- 140ml Greek yoghurt (full fat)
- 50g icing sugar
- Juice from ¼ lemon
- Extra freeze-dried red berries (from the same cereal packet), for decoration
- 30cm x 20cm swiss roll tin, lined with baking paper (or a tin of your choice of shape)
Method
1. In a large bowl, crush the cereal using the end of a rolling pin.
2. Warm the condensed milk in a saucepan (this should only take a minute or so; do not allow it to boil). Pour it over the crushed cereal.
3. Pour it into a prepared tin and press the mixture firmly into the tin (including into the corners) using a palette knife or potato masher. Transfer to the fridge for 30 minutes.
4. Meanwhile, make the icing by mixing the yoghurt, icing sugar and lemon juice together. Spread it over the top of the cereal bars and then crumble over any remaining red berries. Transfer to the freezer for 30 minutes before cutting into pieces using a sharp knife. Store in the fridge.
